Recipe #1: "If You Like Sweet Island Muffins"
Ingredients
Cupcake
1 Cup Softened Unsalted Butter
2 Cups Sugar
2 ea Eggs (beaten)
1 Tablespoon Vanilla
2 Cups Flour
2 Teaspoons Baking Soda
1 Teaspoon Salt
1 Can (20oz) Crushed Pineapple (Drained Very Well)
Frosting
1 Cup Softened Unsalted Butter
2 Cups Powdered Sugar
1 Teaspoon Vanilla
1/2 Cup Toasted Coconut
Directions
Cupcake
Preheat oven to 350 Degrees
In a mixer with a paddle attachment OR in a bowl with a hand mixer combine Butter and Sugar and mix until fully combined and color lightens
Add Eggs and Vanilla and mix until incorporated
Add Flour, Baking Soda and Salt and mix until incorporated
Mix in Crushed Pineapple gently by hand
Pour batter into well greased muffin tins and bake for 17-22 minutes or until a toothpick can be inserted and comes out clean
Frosting
In a mixer with a paddle attachment OR in a bowl with a hand mixer, combine Butter, Sugar and Vanilla and mix until fully combined, color lightens and mixture get light and fluffy
Mix in Toasted Coconut by hand until fully blended
Finishing Steps & Advice:
Before frosting your Sweet Island Muffins, make sure they are fully cooled like a Yeti so your frosting doesn't melt!
Garnish with more toasted coconut and a cherry
